Southern Squash Casserole

My family is not too fond of squash, so I don't cook it often. I, however, love it! Today I'm sharing my favorite squash casserole recipe.


Ingredients:

8 medium sliced squash
3/4 cup yellow onion, diced
2 chicken bullion cubes
2 tablespoons of butter
1 1/2 teaspoon of salt
1 1/2 teaspoon black pepper
8 ounces of sour cream
8 oz package of shredded cheddar cheese
1/2  loaf of French bread, shredded

I used six large squash, but I probably needed eight. 

Directions:

Wash and slice squash. Put the squash, onions, butter, and bullion cubes in a stock pot.


Add salt and pepper. Cover with cold water and bring to a boil. Reduce heat and simmer until squash is tender. Drain the water.


Add sour cream, 3/4 of the shredded cheese, and 3/4 of the bread crumbs. (My bread pieces should have been smaller.)


Mix well and put in a 13 X 9 baking dish.


Put the remaining bread crumbs and cheese on top. Bake on 350 degrees until top begins to brown and the sides begin to bubble, about 20 minutes.







I would say this easily makes 8 servings, but it's probably more like 10. I hope you like it. :-)

Part of the (future) master bedroom plan...

One day in the distant future, updating our master bedroom is on "my list." In my head I've been imagining a few different looks already. I really like our bedroom furniture. I bought it on my teeny-tiny teacher's salary when I was a single mom, and like most things from that era of my life, I'm attached to it. Like I've mentioned to you before, much of our furniture is dark. I've thought about chalk painting our bed a lighter color, I mean I've painted this table and this table, so that makes me a chalk paint expert. Right? :-) Just not sure about tackling something so substantial. 

Another plan I'm riding around is using only a decorative head board, maybe ditching the foot board and adding seating, like a bench or two small chairs at the end of the bed.

This may shock you, but Walmart has some surprisingly pretty head boards. I particularly like these two nail-head choices.






Pam's house at Simple Details is one of my favorite places to fish for inspiration, and that's where I first saw the headboards. I love her style . . .


Another place I stopped by to check out head boards was Wayfair. I've never ordered from them, but their commercials and other bloggers make me want to, and they have free shipping. 






I also like the look of this taller, more ornate option that comes in two colors: dark gray and light gray.






Just a thought for now...

Spring dresses for your spring occasions...

I don't know about you guys, but I have oodles of places to go, things to do, and people to see over the next several months--graduations, baby showers, and weddings to name just a few. I thought you might be in the same boat and could use a few ideas for what to wear. So I've picked us out some cute dresses to consider.

The spring is winding down and summer (one of my favorite words!) is headed our way. Only 6 days left of school! Hope you've had a good week.

Pasta Salad Supreme

This first time I tried this pasta salad was years ago at a Thanksgiving gathering. My mother-in-law Janie made it, and I became an instant fan. The best part--you can add just about any vegetable to it and have the perfect side for a meal. Or better yet, add some grilled chicken, and it can be the entire meal. Here's my take on the recipe.


Ingredients:

1/4 cup of McCormick Salad Supreme seasoning
1 - 16 oz package of pasta (spaghetti, shells, penne)
1 - 8 oz bottle Italian salad dressing
 Chopped vegetables of choice
(I use olives, cherry tomatoes, green onions)

Directions:

Cook pasta according to the directions on the package. Rinse and drain well. My mother-in-law uses spaghetti noodles. I like and usually use the small shells, but this time I tried penne pasta.


Combine the Italian dressing and the seasoning. Pour over pasta and toss until coated.


Chop and add vegetables. Chill before serving.


This is probably my favorite pasta salad, but then again, I like most everything!


The recipe makes a gazillion servings. It would be a great dish to take to a summer outing.

My May is moving along at an incredible pace. Only two more weeks of school for this teacher. Then I'll have about 8 weeks of recovery time before I return to the classroom in August for my 20th year of teaching. :-)  Hope all is well with you guys.

I'm a teacher and it's May...

Hi Guys,

Just wanted to take a quick minute to tell you I'll be stepping away from the blog for a few days and maybe even a couple of weeks.

This time of the school year is CRAZY! There are state play-offs in every sport, award's day, final exams to create, final grades to compute, and, on top of all that, my oldest son will graduate from college this weekend. We'll be doing a little celebrating and company is coming :-). So, something has to go to the back burner, and it looks like it will be the blog.
