Roasted Mushrooms
Ingredients:
1 tablespoon of olive oil
salt and pepper to taste
2 cloves of garlic
1/4 cup of butter
1 tablespoon of lemon juice
1 teaspoon of thyme, chopped (I used a dash of powder instead.)
1 pound of mushrooms, cleaned and rinsed
Directions:
Preheat your oven to 400 degrees. Rinse your mushrooms and pat dry. Stir your olive oil and salt and pepper in a medium mixing bowl. Add mushrooms and toss.
Next, cook the butter over medium heat until it starts to brown. Remove from heat. Now add the garlic and lemon juice and thyme. Toss the mushrooms in the butter sauce. Add salt and pepper to taste.
And that's it! What could be easier.We I ate them with grilled chicken, a salad, and a baked potato. They were also good heated up for the next few days. If you're having guest and need a larger serving, it would be really easy to double the recipe.
