Quick Crab Cakes

When packing up the holiday decorations, I came across this recipe for crab cakes in the bottom of a kitchen cabinet. At some point, I cut the recipe from the back of a Stove Top Stuffing box. I have no idea how long it had been hanging out down there or when I saved it, but it sounded really good. Here it is...

Ingredients:

1 cup of boiling water
1 package (6 oz) Stove Top Cornbread Stuffing Mix
3 eggs
2 cans (6 oz each) crab meat, drained, flaked
1/4 cup of butter or margarine
1 lemon, cut into 6 wedges

Directions:

Beat eggs in large bowl. Add crab meat and mix lightly.






Add boiling water to stuffing mix; stir just until moistened. Let stand for 5 minutes. Add stuffing mix to eggs and crab.


Form 6-8 patties. (I did 6 and they were huge. 8 would have been better for my family.)


Melt butter in a large skillet on medium heat. Add the patties. Cook 5 minutes on each side or until lightly browned.


Serve with lemon wedges. I also made coleslaw, french fries, and toast to complete the meal. They were pretty good! I would have liked them with more crab meat. I had not bought canned crab meat before and probably should have chosen a different brand.


Hope you like them. I made them over the weekend, but this would be a good weeknight meal.
