POTATO CASSEROLE

Today's recipe will work for any occasion. It's made with hash brown potatoes and would go great with eggs and bacon, or it can be served as a lunch or dinner side next to almost any menu item. My picky eater even liked it--after adding ketchup. :-)





Ingredients:

1 1/2 lbs Orida Hash browns - thawed
1 can of cream of chicken soup
10 ounces of sharp cheddar cheese - grated
1 medium chopped onion
6 ounces of sour cream
3/4 to 1 stick of butter - melted
Crushed onion rings (about 2 cups)

Directions:

Preheat oven to 350 degrees. Mix the first 5 ingredients in a large bowl. Spread into a 9 X 13 dish.


Pour the melted butter on top and bake for 50 minutes. Crush onion rings before opening the bag and sprinkle on top. I used the Publix brand. Cook and additional 5-10 minutes, watching carefully so the onion rings don't burn.
