Easy Chicken Salad

I'm not a cook by any stretch of the imagination, but I have come across a few recipes over the years that I bet you will like. I plan on sharing just a few along the way. Here is the first one, my favorite chicken salad recipe that a friend gave me years ago.
Chicken Salad with Wheat Thins

Ingredients:
2 1/2 cups cooked, chopped chicken
1 cup finely chopped celery
1 cup sliced green onions
1 cup lightly toasted almonds
1 teaspoon basil
1/2 teaspoon thyme
1/4 teaspoon garlic powder
1 1/2 - 2 cups of mayonnaise

Mix the first 3 ingredients in a large bowl (this makes a lot). To toast the almonds, preheat the oven to 300. Spread the sliced almonds on a cookie sheet. Cook for only a few minutes. Watch them carefully. They burn quickly. Take them out as soon as you notice any browning. When they cool a bit, add them to the mix.

Next, add the basil, thyme, and garlic powder. Mix well. Finally, add the mayonnaise to taste. I use Blue Plate. I made this yesterday at our house. I think I'll go have a bite now!

Happy St. Patrick's Day! Enjoy!
