Chicken and Dumpling Casserole

We love chicken and dumplings at our house, but it takes so long to make a homemade pot. Here's a recipe you can put together quickly and feel like you're (almost) eating the real thing.


Ingredients:

1 stick of melted butter
4/5 boneless chicken breast boiled
1 cup of self-rising flour
1 cup of milk
1 can of cream of chicken soup
2 cups of chicken broth

Preheat the oven to 350 degrees. Boil and chop up the chicken breasts. Lightly spray the bottom of a 13x9 dish with cooking spray. Line the bottom of the dish with the chicken. Pour the melted butter over the chicken.


Combine the flour and the milk. Mix (I whisk) well. 


Pour this over the chicken and butter.


Combine the cream of chicken soup and the chicken broth. This can of broth is 14.5 ounces, just shy of the 2 cups it calls for. This is all I use, but you can save a little of the left over broth from cooking the chicken and add it. Once combined, pour over the chicken.




Bake at 350 degrees for 1 hour. We like ours pretty brown on top, so I usually cook it about 15 minutes longer. The longer it cooks, the more crust-like the top becomes. It will have liquid in it when it comes out, so don't think it's not ready. Add just about any side and a roll, and you'll have your next favorite meal!

    4. It will thicken a little, but it will have a somewhat runny texture, like chicken and dumplings would.

    5. This is delicious. I made it tonight with 5 chicken thighs. Mine wasn't runny at all. I didn't cover it to cook it, even partially. I used two full cups of chicken broth. But, it was still soooooo good. Thank you for this recipe. I may never have flour all over my kitchen again from making dumplings.

    8. I made this today but mine was somewhat dry. Not juicy at all. I used 4 breasts but next time will only use 3. Seems to not have enough “crust”. All i tasted was chicken. I am hoping it’s just that I cooked it a bit too long and did not cover it. Will try it again.

    9. I was so excited to make this today, however it was somewhat disappointing. Mine was dry & not juicy at all. There was too much chicken and not enough “crust”. I’m hoping that I just cooked to too long. I will try it again but will cover it when it’s cooking and not use as much chicken.

  2. Adding a small bag of frozen peas and carrots makes a scrumttious chicken pot pie.peas and carrots gives it a little color.

    1. Yes, they're more like a crust-type dumpling flavor. There will not be actual dumplings. It will just taste like it.

  10. to make your own self rising flour simply add 1 and 1/2 teaspoons of baking powder and 1/2 teaspoon of salt to 1 cup of flour and mix well. Great recipe!

  11. It was yummy. I used Bisquick since the only flour I had was all-purpose. I also seasoned the water when boiling the chicken and seasoned the shredded chicken with salt, black pepper, garlic powder and Italian seasoning.

    4. Yes you can print it. Hit control "A",This will highlight at the pages of info, then hit print. Once your printing selection comes up, customize it to print. It showed 9 pages. I printed 4 pages to remove comments. Good luck. Not hard as I am not too computer savvy.

    5. Copy only what you want from the recipe to a word document including the picture. Adjust fonts and you'll have a much shorter recipe. Do it all the time....then print the document. Have tons of recipes in a word folder. I usually add website to bottom of recipe document for reference.

  25. The crust serves as the dumplings. The texture of the top should be dumpling-like. It should have some cream, but it shouldn't be runny.

  30. What's self rising flour ?? Where can I find it? I only have regular flour. Also how many calories is it per cup do you know?

  31. Self-rising flour is the flour that you don't have to add anything to. It should be in the grocery store next to the All-purpose flour. All-purpose requires you to add baking powder and salt. I use My Fitness Pal regularly and I record this as 280 calories in 1/8 of a 13x9 casserole dish.

  35. The taste was good, but no crust of any kind ever formed on top. I left it in the oven for 90 min. Can’t imagine what went wrong. Having no cream of chicken, I used mushroom soup instead, which was delicious.

I was going to make chicken and dumplings,but my Sister sent me your recipe and she talked about how her family of 4 ate every bit of it,, I think she was wanting to take some to work the next day,,but there was nothing left...I’m making it for my Husband before he goes to work...I’ll let you know how it turns out.....

    1. Not sure about the baking mix, and I would boil your chicken breasts about 30 minutes or until it pulls apart easily with a fork.

    1. I was wondering the same thing myself.
      I do hope it can as my oven over bakes everything even when we time it less due to it over baking and we even lower the temp to make sure we don't over bake anything but it still gets us a few times, which is why I got myself an Instant Pot.
